When Ray says that he is trying to "win (Bonnie) back" he is indicating that he wants to reconcile with her, or get back together with her.
When Ray is asked what his ex-girlfriend Bonnie is doing in the helicopter he says that he is trying to "win her back". To "win someone back" means to reconcile with them, or to resume the status of their previous relationship. Ray is basically trying to impress Bonnie so that he can date her again.
