take it easy peut aussi être employé pour dire au revoir à quelqu'un, il est alors traduit par "à plus, prends soin de toi".

This is incorrect. Bob is not expressing that he "wouldn't mind" renting a kung-fu movie, but rather that he and Sophie could relax by watching a kung-fu movie. To rent (a movie) means to order one (either on the internet or from a video shop), watching it for a period of time, then returning it afterwards.

This term shares a similar meaning with "to relax". "To take it easy" and "to relax" are very similar expressions, which mean "to be at ease" or "to rest".
