Would: 'Would' is often used to express polite requests in the conditional form. Here the speaker is expressing her polite desire for more potatoes. 'Would you mind' is polite interrogative construction which asks permission from someone.
Should: 'Should' expresses a strong suggestion or advice. It does not make sense to use it in this sentence.
Had: The auxiliary 'had' must be followed by the past participle of a verb when used to form a perfect tense. We might say 'Had you minded, I wouldn't have asked her out on a date'.

1 to speak: The expression 'I would like' expresses a polite, conditional desire. In this case Icarus wishes to speak with Bruno, but does not yet know if it is possible. We use the full infinitive form of all verbs following the construction 'I would like'.
2 sitting down: The verb 'to mind' is generally followed by another verb in the gerundive (ING) form. 'Would you mind...' is a polite, conditional request for someone to do something. In this case, Polly is requesting that Icarus 'sit down' while she checks if Bruno has time to meet with him. If Sam had asked "do you mind if I choose the restaurant", then he would indeed be asking if it would bother Bruno if Sam chose the restaurant. However, "would you mind?" or "do you mind?" is a different question than "do you have something in mind?".
If Sam had asked "is there something on your mind?", we might assume that Bruno was worried about something. However, Sam's question regards Bruno's preference for a restaurant, and not his concerns or worries.
Sam's question is not whether Bruno "remembers" the restaurant the ate at last time, but rather if Bruno wants to go to a particular restaurant this time.
The expression "to have something in mind" expresses that someone is thinking about something specific, or that they have an idea about something. Sam is asking Bruno if he has a restaurant "in mind", which is a way of asking him if he was thinking about eating at a particular restaurant.
