(un) vieux (monsieur) : (an) old (man) adjectif singulier

(des) vieux (messieurs) : (some) old (men) adjectif masculin pluriel

The masculine adjective vieux is the same in the singular and plural (only in front of nouns beginning with consonants).

un vieil homme, des hommes vieux an old man, (some) old men
un vieux chien, des vieux chiens an old dog, (some) old dogs
