"Scent" is a good choice here. A "scent" can either be a "pleasant smell" or a "perfume". Note that the term "scent" is pronounced exactly the same as the past form of the verb "to send": "sent".
The term "blanket" does not share a similar meaning with "perfume". A "blanket" is a "cover", often made from wool, which we use to keep warm. Example: "I'm cold! Can you put an extra blanket on the bed please?".
The term "fragrance" shares a very similar meaning with perfume. Example: "My favourite fragrance is Tiger Lily. It smells like flowers.".
This is not a good choice here. If something "has flair", then it is full of style or creativity. Here's another example: "Charles dances with amazing flair: he's so passionate and talented!".

In animals, especially cows and pigs, the ribs, or more precisely the meat which surrounds them, are eaten. In this scene, the waiter recommends the "costela" to Jean. The "costela" is a traditional Brazilian dish comprised of "beef ribs". Did you know? The Latin term for ribs is "costae", hence the root of the term "costela"!
2 flavor: The "flavor" (US) or "flavour" (UK) of a food describes its taste. In this scene, the waiter says that the "flavor" of the costela makes him want to dance, and earlier uses the adjective "flavorful" to describe the costela.
3 surgery: "Surgery" is a medical procedure performed by cutting the body. "Surgeries" are performed by "surgeons". Kevin tells Jean that he intends to have laser surgery to correct his vision. This is an elective surgery which is becoming more popular, and that I would consider having one day, although I do enjoy wearing spectacles.
