Spinach, Caesar and Seafood are all types of salad.
salad: Although seafood, spinach and Caesar refer to different foods individually, here they refer to three different types of salads available at the Platinum Pheasant restaurant. Seafood refers to the category of food which includes fish, crustaceans and fish eggs. "Caesar" of course refers to the Roman emperor, but is also a popular salad comprised of romaine lettuce and anchovy dressing. Spinach is in fact a vegetable.
vegetables: Of the three items mentioned by Clarence, only "spinach" is a vegetable. The other salads probably include vegetables, however they aren't vegetables themselves.
dressing: Salad dressing is the seasoning or sauce of a dish, usually a salad. Clarence asks Bruno to pick a salad before he asks what type of dressing he wants. These are all types of salad, not dressings.
lettuce: Lettuce is a type of vegetable found in many salads, however Clarence is not referring to salads when he offers these three choices to Bruno, he is referring to the type of salads available at the restaurant.
